SPICY ROASTED CAULIFLOWER

INGREDIENTS:
cauliflower:
- cauliflower (1 medium)
- coconut oil (2-3 tbsp)
- oregano (1-2 tsp)
- allspice (1/2 tsp)
- cumin (1 tsp)
- chili (3/4 or 1 tsp)
- salt (to taste)
feta sauce:
- feta (100 g)
- thick natural yoghurt (80 g)
- lemon juice (2 tbsp)
- black pepper (to taste)
DIRECTIONS:
1. Spices: mix thoroughly oil with spices.
2. Cauliflower: cut off leaves and bottom of the roof (whole cauliflower remains intact). Cook covered 3-5 minutes in hot water (until slightly softened).
3. Transfer into the baking dish (it’s hot!). Rub with the spices (i.e. with spoon). Sprinkle with salt and bake 35-40 minutes (200°c)
4. Sauce: blend all ingredients for a thick creamy sauce (3-5 minutes or until completely smooth).
5. Serve hot with cold feta sauce
