EASY PORK WITH BEANS
BASIC INFORMATION:
TOTAL TIME: 120 minutes +time to soak beans (overnight)

INGREDIENTS:
beans:
- white beans, preferably small, 1 cup (250 ml/8 oz)
- cold pre-boiled or filtered water, 3 cups (24 oz)
- bay leaf (1 leaf)
- marjoram (1 tsp)
- salt to taste (about 1/2 tsp)
meat:
- pork stew, 400 g (14 oz)
- salt (1/3 tsp)
- paprika (1 tsp)
- marjoram (1 tsp)
- onion (1 large)
- beef stock or water, 200 ml (7 oz)
- lard or other solid oil (1 Tbsp)
- kielbasa, 150 g (5 oz)
- tomato paste (4 tsp)
roux:
- less than 1 Tbsp lard
- 1 Tbsp all-purpose flour
for finishing – spices of choice e.g.
- garlic (1 clove)
- sugar (1/3 tsp)
- marjoram (1 tsp)
- black pepper (1/3 tsp)
DIRECTIONS:
1. Soak beans in cold filtered or pre-boiled water for 6-12 hours (or overnight).
2. Cook the beans with “their” water over small heat uncovered until softened for about 1 hour. After 30 min add bay leaf and marjoram. Add salt at the end.
3. Wash and dry pork meat, cut into pieces. Add salt, paprika and marjoram. Put aside.
4. Peel and slice kielbasa. Peel and chunk the onion.
5. Heat up lard (medium heat) and add meat. Mix until browned, add onion and cook over medium heat for about 10-15 min. Add beef stock (or water), lower the heat and let cook covered for another 30 min or until the meat is softened. Add kielbasa at the end of the cooking. Add beans with “their” water and tomato paste. Mix and cook shortly over small heat.
6. Prepare roux: heat up lard in a pan, add flour mixing quickly for a minute or two (the roux cannot be gold).
7. Add roux to the pot with meat and beans. Mix thoroughly. Cook over small heat for another 5 min.
8. Add spices of choice at the end (garlic, sugar, marjoram, black pepper). Let rest for at least 30 min (covered) and serve hot with bread or potatoes.
