INGREDIENTS:
- favourite nuts (100 g)
/e.g. mix of hazelnuts, cashews, almonds and walnuts/ - dried fruit (50 g):
– dried cranberries (25 g)
– raisins (25 g)
..or other favourite dried fruit (e.g. chopped dried apricots, etc.) - oatmeal (250 g | 2 1/4 cups)
- flax seed (50 g | 5 tbsp)
- sesame seed (50 g | 5 tbsp)
- shelled sunflower seeds (50 g | 5 tbsp)
- liquid honey (3-4 tbsp) you can give more, if the bars are to be more sweet)
- vegetable oil (2 tbsp)
- eggs (2 whole)
/or 1 egg yolk+2 egg whites or 2 egg whites/
DIRECTIONS:
1. Chop coarsely nuts and dried fruit. Beat the egg with a fork until the yolk and white are combined.
2. Place chopped nuts and raisins into a large bowl. Add oatmeal, seeds and mix distributing them evenly. Then add honey, oil and beaten eggs, mix thoroughly again.
3. Line a pan with baking paper. Spoon the mixture into the prepared cake tin and press down firmly (the more compact the better i.e. bars do not crumble).
4. Bake in 180°C for 20-25 minutes, then cool in the baking tray (do not move, leave to cool completely, otherwise they may crumble).
5. Cut into bars. Crumbs can be used as granola (and added e.g. to yogurt)
