CHICKEN CUTLETS IN TOMATO MARINADE

INGREDIENTS:

meat:

  • turkey or chicken fillets (600-800 g)
  • spices for meat:
    – salt and black pepper (to taste)
    – other favourite spieces e.g. herbs
  • egg (1 egg)
  • milk (2-3 tbsp)
  • flour (2-3 tbsp)
  • bread crumbs (2-3 tbsp)
  • oil (to fry)

marinade:

  • onion (2 onions, medium)
  • 100% tomato juice (500 ml)
  • sunflower or canola oil (100 ml)
  • vinegar (40 ml)
  • allspice (3-4 balls)
  • black pepper (4-5 balls)
  • bay leaf (1 medium)
  • salt (1/2 tsp)
  • sugar (2 tbsp)

DIRECTIONS:

  1. Cut fillets into cutlets (12-14 cutlets). Pound each one to equal thickness. Season with spices (both sides).
  2. Beat egg with milk mixing them thoroughly (egg wash). Dip each cutlet into the flour, shake off the excess, then run through the egg wash to coat it lightly. Lay into the bread crumbs, turn over and press to coat each cutlet thoroughly.
  3. Fry in hot oil until equally brown on both sides (2-3 minutes per side). Then transfer onto the plate and set aside for a while.
  4. Marinade: slice onions and put all the ingredients into the saucepan. Cook until onion is tender (10-15 minutes, low or medium heat), then turn off the heat and let it cool to room temperature.
  5. Put cutlets in a bowl. Pour marinade over and toss to coat evenly. Cover the dish and put into the fridge to balance the flavors (3-4 hours or overnight).
  6. Serve cold. It’s super delicious with homemade bread.
